Seafood Pasta

I always seem to take home a box of leftovers from a restaurant. I had some cedar plank dill salmon and sauted shrimp 'leftovers' which I could not bear to see go to waste. So! Decided to look through the refrigerator and pantry and came up with this recipe. Just delicious!
Course Dinner

Ingredients
  

  • 1 Onion (Sweet, Yellow, White)-Diced
  • 1 Jalapeno (Seeded)-Small Diced
  • 4 Cloves Garlic-Thin Sliced
  • 4 Oz Mushrooms-Sliced
  • 1 14oz can Italian Stewed Tomatoes
  • 4 Oz Angel Hair Pasta
  • 4 Oz Cooked Salmon
  • 4 Oz Cooked Shrimp
  • Parmesan Cheese-Shaved or Grated
  • 1 tsp Chopped/Sliced Green Onion
  • 1 tsp Olive Oil OR Avocado Oil
  • Salt & Pepper to Taste
  • Red Pepper Flakes to Taste

Instructions
 

  • Heat a saute pan on medium high heat with olive or avocalo oil. Once heated, add the diced onions, jalapenos and mushrooms, stir. Add salt and pepper and chile flakes. Saute for about 4-5 minutes,
    Add sliced garlic, stir and cook for another 2 minutes.
    Add stewed tomatoes and stir.
    In a small-medium pot, add water and bring to boil. Add a pinch of salt, bring to boil and add pasta. Reduce to medium, stir and keep an eye on the water to make sure it doesn't boil over. Simmer for about 4-5 minutes.
    Add flaked salmon and shrimp to sauce and gently stir for 1 minute.
    Add about 1/2 cup pasta water to sauce.
    Drain pasta and add to sauce, stir until mixed.
    Top with shaved or grated parmesan cheese and sliced green onions.
