Santa Lucia’s Light

Inspired by the "Festival of Lights," this cheesecake is filled with rich lemony goodness.

Equipment

  • 1 9 or 10-inch Springform or Removable Bottom Pan

Ingredients
  

Crust:

  • 1 1/2 cups ground lemon cookies
  • 3 tbsp melted unsalted butter
  • 2-3 tsp fresh lemon zest

Batter:

  • 2 lbs softened cream cheese
  • 1 cup granulated sugar
  • 1 tbsp lemon curd
  • 1 tbsp Limoncello
  • 1 tsp vanilla extract

Topping:

  • Lemon Pirouettes If no Pirouettes you can use birthday or tall thin candles

Instructions
 

  • Set Oven to 350 degrees

Crust

  • Mix the ground lemon cookies, unsalted butter and lemon zest. Press onto the prepared pan with clean hands or use the bottom of a drinking glass.

Batter

  • Using a stand mixer, mix the cream cheese until smooth. Add the sugar, lemon curd, Limoncello and vanilla extract. Mix until well blended.
    Pour into prepared crust
    Bake for 30 minutes, reduce heat to 200 degrees and bake another 20 minutes. check for doneness, if still too wobbly, you may need to bake for another 10 minutes.
    Let cool and then refrigerate for at least 6 hours.

Notes

Seasonal Adaptation: Winter Solstice Sun. Don’t change anything, just leave the pirouettes/candles off!
